Extraction of Chilli Sauces and Peppers

Whilst performing an extraction of your chilli peppers/chilli products for analysis on the ChilliPot- Scoville Meter you can often get a qualitative indication of whether your chilli sample will score high or low from the colour of the extract. The 'rule-of-thumb' is the deeper the red colour then hotter the sample. We have illustrated this in the adjacent image.

 

Do note that there are a natural colours associated with chilli products, that are not linked to the pungency so please accept this as only a rule of thumb.
