How hot is a chilli?

This week the ZP Chilli Group spoke with Lene Tvedegaard about the Scoville Scale and the Nordic Score.

 

The adjacent scale provided by Lene shows the correlation between the Nordic Scale and the Scoville Score.  It is pertinent to note that pure Capsaicin has a Scoville Heat Unit (SHU) of 16,000,000 or 30 on the Nordic Scale.

 

At the ZP Chilli Group we calibrate the chilli hotness sensors using pure capsaicin and dilutions of capsaicin, and so we are able to objectively report the hotness of a chilli or a chilli derived product, rather than the Scoville panel or a taste test which are both subjective.
